When working with Black tea, a fully fermented tea, a number of key factors in brewing method exist to help deliver a fine cup of black tea. Before brewing, it is strongly recommended to warm up the teaware with boiling water to stimulate the subsequent tea aroma released. Like Green Tea, Gaiwan is also deemed the optimal pairing in brewing and tasting. Solving Common Brewing Challenges

Many enthusiasts may struggle with excessive bitterness – a problem easily resolved through multiple ways including controlling water temperature, quality, reducing steeping time and using suitable teaware.

 

-Steeping Time

Do not over-steep the tea leaves, otherwise excessive tannins will be released. Follow the tip “slow water injection and short steeping time” The lasting time may be extended or shortened, depending on the Black tea varieties you are enjoying and preferred mouthfeel.

 

-Water Temperature

Water temperature becomes critical in Black tea brewing due to its processing method and fermentation level. Using overly hot or cold water directly is not recommended, as this may make the tea taste bitter, and weaken its unique flavor profile. Note, nowadays, some young people would give cold water treatment to dry tea leaves which we call the iced or cold brew. -Water Quality

Mineral water is not good. If using tap water, better to filter and boil it, then let it sit unlidded for few minutes to remove chlorine and cool down a bit.

 

-Brewing Teaware

Chinese tasters would advise that apart from glass teaware, such as Gaiwan, Yixing clay teapots offer superior thermal insulation properties that can sustain black tea's serving temperature and long-lasting flavor. Some people would say metal teaware, may react with chemical compounds contained in the tea, altering the color and taste of tea soup; Some would not.
